Science with Weck, Worscht and Woi? Rolls, sausages and wines the three important ingredients of Rhineland are being scrutinized. Indeed who would think about the physics of the dough when Paarweck (twin bread rolls) are mentioned, about solid emulsions when talking about ring bologna sausage and about the interaction of multiple molecules dissolved in a water-alcohol mixture when alluding to wine? With good humor and hunger for knowledge, we draw out physicochemical and sensory secrets of the three Ws: Science becomes palatable.
